Ebitata is a traditional bread baked with brown or white grain flour and ripe lisotsi bananas. One of the eighteen subtribes of the Luhya people in Western Kenya, the Abanyole community, created it.
Maize flour or sorghum flour is combined with ripe lisotsi bananas. One to one is the ratio. Next, the mixture is manually formed into little disc-shaped chunks, which are then wrapped in fresh banana leaves. After that, it is prepared for serving by steaming it in a saucepan for around twenty minutes. These bananas are excellent for making tasty, nourishing, and healthful dishes for people to eat. There are precautions taken by the ripe bananas to guarantee that eating them won’t irritate your stomach.

Because new types of bananas are being introduced, the bread is becoming extinct. Many farmers have neglected to preserve this unique species as a result of the commercialization of other kinds (like Cavendish).
