WHAT IS MTURA?

Making this sausage of meat, tripe, and blood is its own festive occasion in Kenya.

Mtura is a mixture of cow’s meat stashed inside the intestine of a cow/cattle and roasted mainly by the roadside usually in the evenings. Many Nairobians from work, tired, still in suit stop in these smoky places to buy and eat the mtura. They say it has a very nice taste,’and taste like chicken’ , others even go further saying the taste is out of this world. Funny thing, even the ‘hot’ classy ladies stop at these crowded, smoky places to buy and eat the mtura.

The habit of grabbing a roadside snack on your way home from a long day of work is common in many African cities. In Kenya, the snack of choice is often African sausage, known locally as mutura.

Mutura is an intestine-encased mixture of minced pieces of cow or goat meat, tripe, and cooled blood that’s been flavored with onions, salt, pepper, and chili. Vendors and home-grillers roast the sausage over a charcoal stove until it achieves a golden brown.

Traditionally, only men prepared mutura during special occasions, such as dowry negotiation ceremonies; the delicacy was then served only to women while the men enjoyed other parts of the slaughtered animal. Today, however, the sausage can be enjoyed by anyone.

Mutura is a common feature at celebrations and parties where a cow or a goat is slaughtered and some of its innards are barbecued. The sausage is often made right after people finish eating grilled meat. No goat-eating function feels complete without making this African sausage. At almost every party, there will be one person who is considered the expert when it comes to preparing mutura, and they take their role very seriously.

Many times, the whole process of making the sausage is a ceremony by itself, which is sprinkled with lots of laughter, jokes, and guzzles of beer or other drinks of choice. As the smoke billows from the sausage and its aroma fills the air, conversations flow and memories are made.

But do you know the health implications of these Mtura? Below is a list of major concerns:
  1.  Worms especially intestinal
  2. Bacterial infection
  3. Food poisoning.
And all these, their main symptom is diarrhea.
The other concern is the level of hygiene, the handling of the mtura is highly questionable in terms of hygiene. If you have seen how the mtura is handled, then you know what I am talking about. No handwashing is done during handling, people eat in the same board which is not washed. I don’t need to mention how dirty some hands are and you just go and eat in the same place! Many germs are passed in these places.
It’s not that you should not enjoy your mtura, but you should just be careful about hygiene and health before putting something in your mouth.

On the roadside, you can find good mutura in many neighborhoods in Nairobi, including Ngara, Kaangware, Wanyee, Ruaka, Kasarani, Kibera, and Mathare.

The African Sausage is made from both animal intestines and blood. The meal is commonly eaten in the parts of Kikuyu land in the central part of Kenya. It was used in gatherings by the Agikuyu to satisfy the hunger of guests/visitors before the main meal is prepared.

Mutura business – this is a very profitable business opportunity whose products are always in demand despite the season. Mutura business usually does very well in the evening hours when people are coming out from work. Good money On weekdays, he makes between Sh1,500 and Sh2,000 and on weekends, he rakes in up to Sh4,000 in profit.

Ingredients

  1. 400 g boiled ground beef/ boiled minced meat
  2. 1 intestine of cow or goat (boiled)

Steps to Cook Mtura

  1. Fill the intestine with the grounded beef then tie on the other end.

  2. Fill all the intestines. Roast over heat using a wire mesh.

  3. Roast the intestines as you turn till golden brown.

  4. You can cut to pieces and serve. Its good if you cut over a chopping board.

  5. Serve with salt
